78° is the boiling point of alcohol, water boils at 100° so 78° is the magic number that lets us distil. All of the botanicals are extracted at 78° which is much lower than other distilleries. The hand crafted copper still produces spirits with a reputation as a high quality small batch showing unique Australian characteristics. All of our spirits now bare the copper 78° as a mark of their unique Australian character.
